So yes they scope it out a lot,a lot,a lot.They can always ask for new ATC vectors or ways around the storm.

Yes they do especially if they have been briefed by the Dispatcher working his or her flight.The instruments now in the cockpit are very good and getting better all the time.Pilots can dance around thunderstorms and BIG THUNDERbumpers.

I once flew Las Vegas to Ft,Lauderdale and a stop in Pompano Beach.From just after the far east border of Texas,the Thunderbumpers and big clouds going up to 80000 feet were gray,very dark and you could tell very turbulent.The pilot flying the aircraft did a remarkable job dancing all around these huge,dark clouds.These are the ones that if you flew through,you’re aircraft could get torn apart.
